Who doesn’t love rocky road? It’s got all your favourite chocolate bars in. and loads of other tasty little bits. It’s a great way of finishing off packets of things. Throw in anything you fancy! This is no bake, but it can get kinda messy!
Tools you will need:
A Bain Marie (bowl over a pan of simmering water)
Spatulas and spoons for mixing
9 x 13-inch baking tray
Silicone paper and grease spray
65g snickers bars cubed
65g mars bars cubed
50 Cadbury’s crunchies
100g digestive biscuits
50 mini marshmallows
50g dried apricots chopped
50g dried sultanas
500g dark chocolate
250g milk chocolate frozen
Put your milk chocolate in the freezer a good while before you start to make this. This is about tempering the chocolate, so you get that crack when you bite into it.
Line your baking tin with spray and silicone paper.
Bring your pan of water to the boil and reduce to a simmer. Place the bowl over the top making sure the bottom of the bowl isn’t touching the water. Place your dark chocolate in here and melt, stirring all the time. You want the chocolate to reach 46 degrees Celsius. As soon as it does, remove from the heat and add the frozen milk chocolate. Stir continuously until the milk chocolate has melted.
Add all of the other ingredients and stir to cover in chocolate. Transfer straight to the prepared tin, pushing all the mix right to the edges of the tin.
Leave in a fridge to set for about 4 hours, or overnight if you have the time.
